This Gevery village wine comes from a vineyard located in the heart of the village at the foot of the hillside, facing due east.  The parcel is called “La Brunelle”, at an altitude of 260 m. 

Winemaker's notes:

Fermentation: 50% of the entire harvest is placed at the bottom of the vat, the remaining 50% is destemmed and completes the vat. Cold maceration for one week, native yeasts, vatting for 5 to 6 weeks at 30°C. Pigeage and pumping over according to the results of daily tastings.

Aging: 18 months on fine lees worked in oak barrels (30% new barrels, 30% 1-wine barrels, 30% barrels over 3 years old). 36-month drying barrels whose wood comes from Allier and Vosges oak. Light, slow and long heating deep in the wood. Gravity racking and bottling.

Wine tasting: black fruit nose, dominant blackcurrant, evolving towards animal and musky notes. Austere, robust palate, with a long and tannic finish.

Food and wine pairing: tasty and virile dishes (roast lamb, prime rib, duck breast), with a preference for game as it ages. Cow and character cheeses.
